Meal components: Veggie
- 6 cups celery sliced as thin as possible
- 1/2 tsp salt
- 3 tbsp rice vinegar
- 1 tbsp Swerve SP: use 1-2 scoops powdered stevia
- 1/2 tsp fresh ginger riced
- Toss celery and half of the salt in a bowl then let sit for 5 minutes. Squeeze the water out of the celery.
- In a separate bowl, mix the vinegar, swerve, remaining salt and ginger. Pour the mix over the celery and toss.
- Chill for an hour then serve.
