celery
sliced as thin as possible

salt

rice vinegar

tbsp
Swerve
SP: use 1-2 scoops powdered stevia
1/2
tsp
fresh ginger
riced
Instructions
Toss celery and half of the salt in a bowl then let sit for 5 minutes. Squeeze the water out of the celery.
In a separate bowl, mix the vinegar, swerve, remaining salt and ginger. Pour the mix over the celery and toss.
Chill for an hour then serve.
