Ingredients
  • 6cups celerysliced as thin as possible
  • 1/2tsp salt
  • 3tbsp rice vinegar
  • 1tbsp SwerveSP: use 1-2 scoops powdered stevia
  • 1/2tsp fresh gingerriced
Instructions
  1. Toss celery and half of the salt in a bowl then let sit for 5 minutes. Squeeze the water out of the celery.
  2. In a separate bowl, mix the vinegar, swerve, remaining salt and ginger. Pour the mix over the celery and toss.
  3. Chill for an hour then serve.
