meal components: protein + veggie
- 7 oz shrimp (100g per 3.5 oz)
- 7 oz Miracle Noodles 1 pack - AP
- 1 cup bean sprouts AP
- 1/2 cup green onions chopped
- 2 tbsp shallots riced/minced
- 1/2 tbsp tamarind paste (or sub with 1 tsp lemon juice + 1 tbsp tomato paste per 1/2 tbsp tamarind paste)
- 2 tbsp tomato sauce
- 3 tbsp chicken stock fat-free
- 1 tsp fish sauce sub with salt
- 2 sprays Coconut Oil Spray AP
- Stir fry the shallots and shrimp flesh on 2 sprays of coconut oil until shrimp turns orangey.
- Stir in the bean sprouts, green onions and the miracle noodles with the tamarind paste, chicken broth and fish sauce. Cook for about 3 more minutes.
- Serve with a slice of lemon and 1 tbsp of PB2.
