Ingredients
  • 7oz shrimp(100g per 3.5 oz)
  • 7oz Miracle Noodles1 pack – AP
  • 1cup bean sproutsAP
  • 1/2cup green onionschopped
  • 2tbsp shallotsriced/minced
  • 1/2tbsp tamarind paste(or sub with 1 tsp lemon juice + 1 tbsp tomato paste per 1/2 tbsp tamarind paste)
  • 2tbsp tomato sauce
  • 3tbsp chicken stockfat-free
  • 1tsp fish saucesub with salt
  • 2sprays Coconut Oil SprayAP
Serve with: (optional)
  • 1 lime wedgeAP
  • 1tbsp PB2AP
Instructions
  1. Stir fry the shallots and shrimp flesh on 2 sprays of coconut oil until shrimp turns orangey.
  2. Stir in the bean sprouts, green onions and the miracle noodles with the tamarind paste, chicken broth and fish sauce. Cook for about 3 more minutes.
  3. Serve with a slice of lemon and 1 tbsp of PB2.
