Meal components: protein + veggie
- Cook shrimp in boiling water for 3 minutes. Drain and cool.
- Add mint leaves, vegetable broth and lemon juice to food processor and puree.
- In a large bowl, combine cooked shrimp, cucumber, mint dressing, lemon zest, chopped onion, salt, pepper and dill. Toss well
- Serve chilled
- Grill shrimp on skewers rather than boil for extra flavor (and color)
- For AP, use lime juice instead of lemon
