P2 hCG Diet Protein Veggie Recipe | Shrimp and Cucumber Salad | LSP + SP
Ingredients
  • 7oz shrimppeeled, cleaned
  • 3cups Cucumberschopped
  • 2tbsp Red Onion diced
  • 1/2cup Mintchopped
  • 2tbsp lemon juice
  • 2tbsp vegetable brothSP: use water instead
  • 1tsp fresh dillchopped
  • 3/4tsp salt
  • 1/2tsp ground black pepper
  • 1tsp lemon zest
Instructions
  1. Cook shrimp in boiling water for 3 minutes. Drain and cool.
  2. Add mint leaves, vegetable broth and lemon juice to food processor and puree.
  3. In a large bowl, combine cooked shrimp, cucumber, mint dressing, lemon zest, chopped onion, salt, pepper and dill. Toss well
  4. Serve chilled
Recipe Notes

– Grill shrimp on skewers rather than boil for extra flavor (and color)

– For AP, use lime juice instead of lemon
