Ingredients
Salad:
- 6 cups beet greens chopped
- 1/4 cup fresh chopped basil
- 2 tbsp fresh chopped parsley
- 2 cups apple sliced
- 1/3 cup rice vinegar
- 1/2 tsp Swerve
- 1/4 tsp cloves
- 1/4 tsp cumin
- 1/2 tsp salt
Meat and Seasoning:
- 7 ounces sirloin (if it’s thick slice is horizontally so it’s a thinner slab to cook more quickly)
- 1/4 tsp salt
- 1/2 tsp ground cumin
- 1/2 tsp coriander seeds
- 1/2 tsp Swerve
- 1/2 tsp Swerve

Instructions
- Combine salt, ground cumin, coriander seeds and swerve for the seasoning in a small bowl. Rub on sirloin steaks and set aside.
- Place beet greens, basil, parsley and apple in a large bowl. Add rice vinegar, cloves, cumin and salt and toss together well. Divide between two bowls.
- Grill the seasoned sirloin for about 5 minutes on each side. Place on cutting board and let sit for 5 minutes to seal in juices. Slice and place on top of the salad. Serve while steak is warm.
Recipe Notes
- AP Option: Add coconut oil to the dressing and add sliced beets. - Triple the seasoning rub, use 1 3/4 tsp for this recipe then save the rest for later.
