Combine salt, ground cumin, coriander seeds and swerve for the seasoning in a small bowl. Rub on sirloin steaks and set aside.
Place beet greens, basil, parsley and apple in a large bowl. Add rice vinegar, cloves, cumin and salt and toss together well. Divide between two bowls.
Grill the seasoned sirloin for about 5 minutes on each side. Place on cutting board and let sit for 5 minutes to seal in juices. Slice and place on top of the salad. Serve while steak is warm.
Recipe Notes
– AP Option: Add coconut oil to the dressing and add sliced beets. – Triple the seasoning rub, use 1 3/4 tsp for this recipe then save the rest for later.
