Ingredients
- 2 bell peppers (multi colored if possible)
- 1 tsp nutritional yeast
- 2 tsp garlic powder
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp salt
- 1/2 two ground white pepper
- 2 tbsp Egg Whites
- 2 grissini sticks ground into a powder

Instructions
- Remove the stem and seeds from bell pepper, using a small knife to cut around the top and pop out the center, keeping the pepper whole.
- Slice the peppers into 1/2 slices, cutting the pepper crosswise. You should make nice rings! Set aside.
- In a large bowl, mix the nutritional yeast, garlic powder, paprika, oregano, basil, salt, pepper, and grissini powder.
- In a separate large bowl, whisk the egg whites until they form soft peaks.
- Add the pepper slices to the whipped egg whites and toss to coat the peppers in egg.
- Add the grissini spice mix and toss everything together well.
- Place the pepper rings on a lined sheet tray and bake in a 425-degree oven for 8 minutes. Flip the rings and bake for another 6-8 minutes or until golden brown (or alternately, when you flip them, turn to broil and broil for 4 minutes). Serve while hot!
Recipe Notes
- You can opt to dip each ring into the egg white and then into the breadcrumbs in separate bowls to coat them more evenly but I have found this method of tossing everything together to be faster and easier.
