P2 hCG Diet Partial Protein Veggie Recipe | Bell Pepper Rings | AP

Ingredients
  • 2 bell peppers(multi colored if possible)
  • 1tsp nutritional yeast
  • 2tsp garlic powder
  • 1tsp paprika
  • 1tsp dried oregano
  • 1tsp dried basil
  • 1tsp salt
  • 1/2 two ground white pepper
  • 2tbsp Egg Whites
  • 2 grissini sticksground into a powder
Instructions
  1. Remove the stem and seeds from bell pepper, using a small knife to cut around the top and pop out the center, keeping the pepper whole.
  2. Slice the peppers into 1/2 slices, cutting the pepper crosswise. You should make nice rings! Set aside.
  3. In a large bowl, mix the nutritional yeast, garlic powder, paprika, oregano, basil, salt, pepper, and grissini powder.
  4. In a separate large bowl, whisk the egg whites until they form soft peaks.
  5. Add the pepper slices to the whipped egg whites and toss to coat the peppers in egg.
  6. Add the grissini spice mix and toss everything together well.
  7. Place the pepper rings on a lined sheet tray and bake in a 425-degree oven for 8 minutes. Flip the rings and bake for another 6-8 minutes or until golden brown (or alternately, when you flip them, turn to broil and broil for 4 minutes). Serve while hot!
Recipe Notes

– You can opt to dip each ring into the egg white and then into the breadcrumbs in separate bowls to coat them more evenly but I have found this method of tossing everything together to be faster and easier.
