Ingredients
- 1 1/4 cups daikon radish cut into ½” thick slices, (7 oz per 1.25 cups)
- 2 cups red radishes cut into ½” thick slices, (14 oz per 2 cups)
- 2 tsp lemon juice
- 2 tsp lemon zest
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp garlic powder
- 2 tbsp thinly sliced fresh chives optional garnish

Instructions
- Preheat the oven to 375°F. Spray a large baking sheet with a bit of coconut oil cooking spray, or use parchment paper if not using oil.
- Toss the sliced radishes with the lemon juice, lemon zest, salt, pepper, and garlic powder.
- Spread the radishes in an even layer onto the prepared baking sheet.
- Bake for 30-35 minutes, until tender and golden brown.
- Remove from the oven and garnish with fresh chives.
Recipe Notes
Daikon and red radishes have almost the same nutritional profile (like 2 cals difference), so you can use one or the other, or a combination of both. A combination of both would look prettier, of course.

Never in a million years thought that I would like roasted radishes but these are amazing! It feels like such a treat. I found a bag of precut radishes that also made this super quick and easy. I will be making these in P3 as well.
