Ingredients
  • 1 1/4cups daikon radishcut into ½” thick slices, (7 oz per 1.25 cups)
  • 2cups red radishescut into ½” thick slices, (14 oz per 2 cups)
  • 2tsp lemon juice
  • 2tsp lemon zest
  • 1/2tsp salt
  • 1/2tsp pepper
  • 1tsp garlic powder
  • 2tbsp thinly sliced fresh chivesoptional garnish

Instructions
  1. Preheat the oven to 375°F. Spray a large baking sheet with a bit of coconut oil cooking spray, or use parchment paper if not using oil.
  2. Toss the sliced radishes with the lemon juice, lemon zest, salt, pepper, and garlic powder.
  3. Spread the radishes in an even layer onto the prepared baking sheet.
  4. Bake for 30-35 minutes, until tender and golden brown.
  5. Remove from the oven and garnish with fresh chives.
Recipe Notes

Daikon and red radishes have almost the same nutritional profile (like 2 cals difference), so you can use one or the other, or a combination of both. A combination of both would look prettier, of course.
