Meatza Crust
- 7 oz ground chicken
- 1/2 tsp dried sage
- 1/4 tsp salt
- 1 tbsp lemon juice
- 1/4 tsp lemon zest
Topping
- 1 1/2 cup red onion thinly sliced
- 1/4 scoop stevia extract powder
- 2 tbsp balsamic vinegar
- 2 tbsp red wine vinegar
- 1/4 tsp salt
- 1/4 cup chicken broth SP Option: use water instead
- 1 tsp dried sage
- 1 tsp dried sage
- Garnish: Fresh Sage

Instructions
- Add onions and stevia to a large pan and heat over medium for 5 minutes, stirring occasionally.
- Add chicken broth and stir. Cook until broth has evaporated and onions are soft.
- Add both kinds of vinegar to the pan and salt and stir. Let boil, stirring frequently until the liquid has evaporated. Remove pan from heat and set aside.
- In a large bowl, mix ground chicken, ½ tsp sage, lemon zest, lemon juice and salt.
- Press chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap.
- Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
- Remove from oven and top with caramelized onions and sprinkle with 1 tsp sage. Return to oven for 1 minute to heat, slice and serve hot.
Recipe Notes
- Add sliced strawberries for a sweet and savory meatza.
- Add fig extract to crust for an interesting flavor addition.
