Add onions and stevia to a large pan and heat over medium for 5 minutes, stirring occasionally.
Add chicken broth and stir. Cook until broth has evaporated and onions are soft.
Add both kinds of vinegar to the pan and salt and stir. Let boil, stirring frequently until the liquid has evaporated. Remove pan from heat and set aside.
In a large bowl, mix ground chicken, ½ tsp sage, lemon zest, lemon juice and salt.
Press chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap.
Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
Remove from oven and top with caramelized onions and sprinkle with 1 tsp sage. Return to oven for 1 minute to heat, slice and serve hot.
