Instructions
- In large bowl, whisk eggs and whites together. Whisk until fairly fluffy- incorporating more air will help keep them fluffy in the waffle maker.
- Fold chopped spinach and spices into whipped eggs.
- Pour about ¾ cup egg mix into a preheated waffle maker (add a little more or a little less depending on the size of your waffle maker)
- Cook according to your waffle maker directions- these will take about the same time to cook as a regular waffle. If you are unsure, cook for 3 minutes, open the waffle maker and check. When cooked, the eggs should be slightly brown.
- Remove and serve hot. Garnish with a few chopped chives if desired.
Recipe Notes
- A non-stick waffle iron is very necessary for this recipe - Also works great with chopped tomatoes, beet greens or asparagus - just make sure the veggie is finely diced.
