P2 hCG Diet Protein Veggie Recipe | Egg and Spinach Waffles | SP

Ingredients
  • 2 Eggs
  • 6 Egg Whites
  • 4cups spinachfinely chopped
  • 1tsp salt
  • 1/2tsp ground black pepper
  • 1/2tsp paprika
Instructions
  1. In large bowl, whisk eggs and whites together. Whisk until fairly fluffy- incorporating more air will help keep them fluffy in the waffle maker.
  2. Fold chopped spinach and spices into whipped eggs.
  3. Pour about ¾ cup egg mix into a preheated waffle maker (add a little more or a little less depending on the size of your waffle maker)
  4. Cook according to your waffle maker directions- these will take about the same time to cook as a regular waffle. If you are unsure, cook for 3 minutes, open the waffle maker and check. When cooked, the eggs should be slightly brown.
  5. Remove and serve hot. Garnish with a few chopped chives if desired.
Recipe Notes

– A non-stick waffle iron is very necessary for this recipe – Also works great with chopped tomatoes, beet greens or asparagus – just make sure the veggie is finely diced.
