Instructions
- Preheat the oven to 350°F.
- Season the chicken breasts with salt, pepper, and thyme and bake for 20-25 minutes. Remove from the oven, allow to cool and shred. (This can be done ahead of time - is also a great way to use leftover chicken).
- Heat a large pot over medium-high heat.
- Sauté the daikon noodles, garlic, and onion for about 3-5 minutes, until softened.
- Season the noodles with salt and pepper to taste then stir in the chicken broth and shredded chicken. Cover and simmer for 10-15 minutes.
- Ladle into bowls, garnish with fresh parsley, and enjoy.
