P2 hCG Diet Protein Veggie Recipe | Chicken Daikon Noodle Soup | LSP + SP

Ingredients
  • 7oz chicken breasts
  • 1tsp salt
  • 1/2tsp pepper
  • 1tsp dried thyme
  • 4 1/2cups daikon noodles
  • 3tsp minced garlic
  • 4tbsp minced onion
  • 6cups fat free chicken brothSP Option: use water instead
  • fresh parsley for garnish
Instructions
  1. Preheat the oven to 350°F.
  2. Season the chicken breasts with salt, pepper, and thyme and bake for 20-25 minutes. Remove from the oven, allow to cool and shred. (This can be done ahead of time – is also a great way to use leftover chicken).
  3. Heat a large pot over medium-high heat.
  4. Sauté the daikon noodles, garlic, and onion for about 3-5 minutes, until softened.
  5. Season the noodles with salt and pepper to taste then stir in the chicken broth and shredded chicken. Cover and simmer for 10-15 minutes.
  6. Ladle into bowls, garnish with fresh parsley, and enjoy.
