Sprinkle chicken with a ¼ tsp salt and let sit out on a counter for 10-15 minutes. Wrap chicken breast in aluminum foil and bake in a 350 degree F oven for 20-30 minutes or until the chicken is fully cooked (or cook in Instant Pot). Chop and set aside.
Heat the vegetable broth and ¼ tsp salt in a large sauté pan and cook fennel, onion, garlic and carrots until the vegetables begin to soften (about 5 minutes).
Add spices and stir thoroughly.
Add cooked chicken and stir together with veggies and miracle rice. Serve (with apple if doing that).
You can substitute chicken broth for vegetable broth if needed. Grill the chicken rather than steaming in foil for a nice grilled flavor.
