Instructions
- Combine salt, oregano, pepper and thyme in a bowl.
- Slice zucchini lengthwise in ¼ inch planks.
- Brush the zucchini sliced with the coconut oil lightly and sprinkle both sides of each slice with the herb salt.
- Grill for 3 minutes on each side.
- Serve hot or chilled
Recipe Notes
Add nutritional yeast for a cheesy version
Mix coconut oil and 1 Tbsp balsamic vinegar together and brush each slice with the mix for an extra flavor punch
Make Grilled Peaches along with the zucchini and use the same salt/oil method to add a fruit serving as well.
