Ingredients
  • 3 medium Zucchinissliced
  • 1.5tsp salt
  • 1 ½tsp oregano
  • ¼tsp pepper
  • ½tsp thyme
  • 1 ½tsp coconut oil
Instructions
  1. Combine salt, oregano, pepper and thyme in a bowl.
  2. Slice zucchini lengthwise in ¼ inch planks.
  3. Brush the zucchini sliced with the coconut oil lightly and sprinkle both sides of each slice with the herb salt.
  4. Grill for 3 minutes on each side.
  5. Serve hot or chilled
Recipe Notes

Add nutritional yeast for a cheesy version

Mix coconut oil and 1 Tbsp balsamic vinegar together and brush each slice with the mix for an extra flavor punch

Make Grilled Peaches along with the zucchini and use the same salt/oil method to add a fruit serving as well.
