Meal components: protein + veggie
Instructions
- Place the lemon slices on a hot grill and sear until they are nicely charred on each side (About 2 minutes on each side). Set aside.
- Blend the roma tomatoes, onion, basil, garlic, balsamic and salt until smooth. Place in a small saucepan and heat over medium for 5 minutes to thicken slightly. Set aside.
- In a large bowl, mix ground chicken and lemon pepper seasoning.
- Press the chicken mix into an eight inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove the plastic wrap.
- Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
- Remove from oven and spread sauce across the pizza, leaving one inch around the edge plain to be easy to hold.
- Place the lemon slices across the top of the pizza along with the halved cherry tomatoes. Place in the oven for 2 minutes.
- Remove meatza from oven and sprinkle with cilantro. Enjoy hot!
Recipe Notes
- You can also grill the cherry tomatoes in a grill pan in order to blacken them and add some flavor.
- Add a touch of swerve to the sauce to reduce the acidity of the tomatoes (some people prefer a sweeter sauce).
- For AP option, add some steamed broccoli to the Meatza for added color and veggies.
