Ingredients
- 1 cup thinly sliced honey crisp apple
- 1 cup thinly sliced yellow onion for SP Option use no more than 1 tbsp per serving
- 1 cup thinly sliced celery
- 1/4 cup finely diced Thai chili peppers
- 7 oz boneless skinless chicken breast
- 1/2 tsp salt
- 1/2 tsp freshly cracked black pepper
- 1 tbsp sliced green onion

- 1/2 tsp salt
- 1 1/2 tbsp white vinegar
- 2 tsp lemon juice
- 1/2 tsp garlic powder
- Pinch of red pepper flakes

Instructions
- In a small bowl, whisk together ingredients for the dressing. Set aside.
- In a large bowl, toss together apples, onion, celery, and chili peppers. Drizzle over dressing and toss to coat. Place in the refrigerator until ready to serve.
- Heat a grill or grill pan until hot. Season chicken with salt and pepper. Grill until cooked through, approximately 4 to 5 minutes per side.
- Remove chicken from heat and slice.
- Divide chilled salad between two bowls. Top with sliced chicken and serve immediately. Garnish with sliced green onion.
