Ingredients
  • 1cup thinly sliced honey crisp apple
  • 1cup thinly sliced yellow onionfor SP Option use no more than 1 tbsp per serving
  • 1cup thinly sliced celery
  • 1/4cup finely diced Thai chili peppers
  • 7oz boneless skinless chicken breast
  • 1/2tsp salt
  • 1/2tsp freshly cracked black pepper
  • 1tbsp sliced green onion
DRESSING
  • 1/2tsp salt
  • 1 1/2tbsp white vinegar
  • 2tsp lemon juice
  • 1/2tsp garlic powder
  • Pinch of red pepper flakes
Instructions
  1. In a small bowl, whisk together ingredients for the dressing. Set aside.
  2. In a large bowl, toss together apples, onion, celery, and chili peppers. Drizzle over dressing and toss to coat. Place in the refrigerator until ready to serve.
  3. Heat a grill or grill pan until hot. Season chicken with salt and pepper. Grill until cooked through, approximately 4 to 5 minutes per side.
  4. Remove chicken from heat and slice.
  5. Divide chilled salad between two bowls. Top with sliced chicken and serve immediately. Garnish with sliced green onion.
