1cupthinly sliced yellow onionfor SP Option use no more than 1 tbsp per serving
1cupthinly sliced celery
1/4cupfinely diced Thai chili peppers
7ozboneless skinless chicken breast
1/2tspsalt
1/2tspfreshly cracked black pepper
1tbspsliced green onion
DRESSING
1/2tspsalt
1 1/2tbspwhite vinegar
2tsplemon juice
1/2tspgarlic powder
Pinch of red pepper flakes
Instructions
In a small bowl, whisk together ingredients for the dressing. Set aside.
In a large bowl, toss together apples, onion, celery, and chili peppers. Drizzle over dressing and toss to coat. Place in the refrigerator until ready to serve.
Heat a grill or grill pan until hot. Season chicken with salt and pepper. Grill until cooked through, approximately 4 to 5 minutes per side.
Remove chicken from heat and slice.
Divide chilled salad between two bowls. Top with sliced chicken and serve immediately. Garnish with sliced green onion.
