meal components: protein + veggie
- Heat a large skillet over medium-high heat. Add onion and garlic, cooking until garlic is browned.
- Add in zucchini and red bell pepper, cooking until slightly softened.
- Add tomatoes and cook for another couple of minutes. Add fish chunks and cook for 10 minutes.
- Once the fish is cooked through, flake the fish chunks into small pieces.
- Stir in lemon zest, parsley, dill, and salt.
- Serve over butter lettuce leaves.
