Ingredients
  • 7oz white fishcut into chunks
  • 1cup thinly sliced onion
  • 1tsp minced garlic
  • 1cup thinly sliced red bell pepper
  • 3cups thinly sliced zucchini
  • 2tbsp diced tomatoes
  • 1/2tsp lemon zest
  • 1tsp freshly chopped parsley
  • 1tsp freshly chopped dill
  • 1/2tsp salt
  • 2cups butter lettuce
Instructions
  1. Heat a large skillet over medium-high heat. Add onion and garlic, cooking until garlic is browned.
  2. Add in zucchini and red bell pepper, cooking until slightly softened.
  3. Add tomatoes and cook for another couple of minutes. Add fish chunks and cook for 10 minutes.
  4. Once the fish is cooked through, flake the fish chunks into small pieces.
  5. Stir in lemon zest, parsley, dill, and salt.
  6. Serve over butter lettuce leaves.
