- 7 oz ground turkey
- 1/4 tsp coconut oil
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp onion powder
- 1/4 cup sliced pear
- 1/4 cup sliced red onion
- 1/4 tsp coconut oil
- 1 1/2 cups chopped kale
- 3 tbsp basil leaves
- Zest of 1 lemon
- Juice of 1 lemon
- 1-2 tbsp water
- 1/2 cup chopped pear
- 1/2 tsp garlic powder
- 1/4 tsp salt

CHARRED KALE AND PEAR PESTO

- Place a large skillet on high heat. Once hot, add coconut oil and then the kale. Quickly toss the kale in the hot pan for approximately 1 minute. Remove from heat and add to a food processor or blender.
- Add basil leaves, lemon zest, lemon juice, 1 Tbsp water, pear, garlic powder, salt and cayenne pepper to the food processor or blender. Pulse until combined. If the mixture is too thick, add water 1 tsp at a time until the desired pesto consistency. Set aside.
- Preheat oven to 450 degrees F. Line two rimmed baking sheets with parchment paper.
- In a medium bowl, combine ground turkey, 1 tsp coconut oil, black pepper, salt and onion powder. Using your hands, mix together until well combined.
- Add the turkey mixture to the baking sheet and flatten into a round, thin circle. Wrap a wooden rolling pin with parchment paper and gently roll out the meat. Try not to tear the meat.
- Bake the crust for 10 minutes.
- Remove baking sheet from oven. Use a paper towel to soak up the juices before flipping the crust.
- Reduce the temperature to 350 degrees F. Bake an additional 10 minutes.
- Remove from the oven. Top pizza with pesto. Add sliced red onion and pear on top. Serve immediately.
You can also grill the kale if you want extra charred flavor. Grill the leaves whole before chopping them!
For fun, when I made this recipe I divided the ground turkey mixture into 2 crusts instead of 1, and after the initial baking, folded it over to look like a taco and put my toppings on that- purely for a different decorative look. IF you do this, be careful to not overcook crust- it cooks faster divided in two and will get too hard to chew.

I made this recipe without the pears because I didn’t have any and it is so delicious! I have been on this diet for almost a month and have stayed with the original program with a lot of success. But tonight, tonight I went to the alternative and found this recipe. All I can say is WOW and thank you for all the flavors! It’s so delicious and refreshing.
