- 7 oz shrimp
- 2 grissini sticks crushed into crumbs
- ½ tsp Old Bay seasoning
- 2 tbsp egg white
- ½ lemon sliced
- ⅛ cup coconut oil for frying optional - AP
- 2 cups shredded broccoli AP (sub shredded asparagus for an SP recipe)
- 2 cup shredded red cabbage
- 2 tbsp Greek yogurt
- 4 tsp lime juice
- ½ tsp Old Bay seasoning

- In a large bowl, combine the broccoli, cabbage, yogurt, lime juice and ½ tsp old bay seasoning. Toss together to mix and set aside.
- Combine grissini crumbs and ½ tsp old bay in a bowl.
- Place egg whites in a separate bowl and whisk to break apart.
- Dip each shrimp in egg white then in grissini and set on a foil lined sheet tray. Shrimp should be completely covered in crumbs.
- Heat coconut oil in a large saute pan and fry shrimp until golden brown, about 4 minutes. Or, bake shrimp in a 425 degree oven for about 6 minutes or until breading begins to brown.
- Serve shrimp hot with a side of cold slaw. Squeeze the lemon over the shrimp after it has been plated
Pre bagged broccoli slaw can be used in place of shredded broccoli and cabbage (it’s typically just broccoli and cabbage already shredded)
Add shredded apple to the slaw for a serving of fruit
