meal components: protein + veggie + 1/2 fruit
This is designed to be with peaches….buttttt it’s winter. And there’s no peaches at my store. You could definitely use frozen peaches. Whicchhh I didn’t think of till right now, much later, when I was making final edits to this recipe. So do that. Blackberries can work, but I think peaches are much better. But I refuse to re-do the photographs. 🙂

- 7 oz shrimp (100g per 3.5 oz) raw, peeled and deveined
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp lime juice AP
- 1/4 cup cilantro finely chopped
- 2 cups cherry tomatoes whole
- 1/2 cup prepared salsa fat free, no sugar added - AP
- 1/2 cup peaches diced, fresh or frozen defrosted - AP
- lemon juice sub for the lime juice
- Omit the peaches

- Combine the shrimp, salt, pepper, lime juice, and cilantro in a bowl and toss until well coated. Let stand for about 10 minutes.
- Thread the shrimp and cherry tomatoes alternately onto skewers.
- Preheat a grill pan to medium-high heat and cook the skewers for 2-3 minutes per side, until the shrimp are pink and opaque.
- While the skewers cook, mix the diced peaches into the salsa(For SP, omit the peaches).
- Transfer the skewers to plates and top with the peach salsa.

Light, yet filling, and delicious! I guess I REALLY like the peach salsa because I have also made it with broth sautéed chicken and taco seasoned lean ground beef. I wasn’t sure about how the peaches would affect me, but my losses have been consistent so I am loving this!

Hey Michelle! Oh yay!! I’m so glad to hear both that it’s tasting good but that your losses are consistent still as well. I think I was in a bit of a bubble for awhile with doing only original ingredients my first four rounds because so many weight loss clinics do use these other ingredients with many patients that have great overall losses. But either way, it’s nice to always have the personal choice to do what we want. Just want to make sure I never mislead anyone so that’s why I thought the SP and AP terms would be useful.

This is delicious, Rayzel! Thank you so much. I did punch up the shrimp marinade a bit with some extra salt and seasonings. The tomatoes were delicious grilled. I reserved the marinade, and poured a little on top before reheating the dish. These skewers were far more filling than I expected them to be. Thanks again, girl!

Oh good so glad to hear that! I too like things salty. Also I have found different salts provide very different levels of saltiness too so often a person will have to make little adjustments like that depending on the type of salt they have. And extra seasonings is always yummy too!

Yes, I’ve noticed that your recipes are almost always perfectly salted for my tastes! (I’m a P3 to Life member as well…purchased on the first day you released it. :-)) It’s really nice to know that I can trust a recipe to be delicious as written. Oh wow- we must have the same palate then hehe! I do know I like things saltier than I might often think to add and from my research there’s really no problem with using salt- actually for people with adrenal fatigue like myself they say extra salt is good for better blood pressure lol.
