Add spinach, cilantro, parsley, lemon zest and juice, green onion, garlic and spices to a food processor. Pulse briefly until broken down. For AP, swap 2 cups spinach for cauliflower and red bell pepper.
Add chicken pieces to a food processor, season with salt and pepper and blend on medium setting until combined. Do not overwork the mixture.
Divide the mixture into 8 patties using a ¼ cup measure per patty. (Rayzel note- ours was a total of 423g raw mixture / 8 = how many grams/oz for patty?).
Heat the broth in a large frying pan over medium heat. Shape the mixture into patties and add to the pan 4 at a time. Fry until golden brown, turning halfway through – about 12-15 minutes. Add extra broth as necessary to prevent sticking. For AP, fry in ½ tsp coconut oil.
Serve over a salad of lettuce and cilantro seasoned with salt and pepper, with squeezes of lemon wedges.
Batch cooking tip or Alternate Cooking Method Option:
Make larger patties and serve as a burger in a lettuce wrap.
Because these patties do not contain a binder, like eggs, they fall apart pretty easily- your patties might be delightful crumbles over your salad. If you wanted to make them stick together better, as an additional AP option, you could use 1-2 egg whites as a binder. Macros listed are for SP version.
