Ingredients
Dressing:
- 1 tbsp cilantro
- 1/4 cup fresh lime juice
- 1 tbsp white vinegar
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tsp dijon mustard
Salad:
- 7 ounces shrimp
- 1/2 tsp lime zest
- 1/4 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp salt
- 4 tbsp fresh lime juice
- 1/4 tsp minced garlic
- 2 cups riced cauliflower
- 1/2 cup minced onion
- 1/2 cup red bell pepper chopped
- 1/2 cup orange bell pepper chopped

Instructions
- In a small bowl, whisk together all ingredients for the dressing. Set aside.
- Make a shrimp marinade by mixing lime zest, cumin, oregano, garlic, salt and lime juice in a small bowl. Add shrimp, toss and let sit for 5 minutes.
- Place shrimp on skewers and grill for about 2 minutes on each side.
- Combine riced cauliflower, onion and peppers. Toss with dressing.
- Divide cauliflower mix between two bowls and top each with hot grilled shrimp
Recipe Notes
Adding about 1 Tbsp of coconut oil to the dressing will give it a creamier texture and flavor.
Be sure to weigh your shrimp- shrimp come in a huge variety of sizes which will impact how you many you eat for a 3.5 weighed-raw serving size.

I agree with you Rayzel! My husband and I loved this! I had to put a bit of stevia in the salad though to balance it out! So yummy!!
