Ingredients
Dressing:
  • 1tbsp cilantro
  • 1/4cup fresh lime juice
  • 1tbsp white vinegar
  • 1/4tsp cumin
  • 1/4tsp salt
  • 1/8tsp pepper
  • 1tsp dijon mustard
Salad:
  • 7ounces shrimp
  • 1/2tsp lime zest
  • 1/4tsp cumin
  • 1/2tsp oregano
  • 1/4tsp salt
  • 4tbsp fresh lime juice
  • 1/4tsp minced garlic
  • 2cups riced cauliflower
  • 1/2cup minced onion
  • 1/2cup red bell pepperchopped
  • 1/2cup orange bell pepperchopped
Instructions
  1. In a small bowl, whisk together all ingredients for the dressing. Set aside.
  2. Make a shrimp marinade by mixing lime zest, cumin, oregano, garlic, salt and lime juice in a small bowl. Add shrimp, toss and let sit for 5 minutes.
  3. Place shrimp on skewers and grill for about 2 minutes on each side.
  4. Combine riced cauliflower, onion and peppers. Toss with dressing.
  5. Divide cauliflower mix between two bowls and top each with hot grilled shrimp
Recipe Notes

Adding about 1 Tbsp of coconut oil to the dressing will give it a creamier texture and flavor.
