Instructions
- In a medium sauté pan, add onion, garlic and half of chicken broth. Sauté over medium heat for 1-2 minutes to soften the onions.
- Add spinach and remaining broth. Cover pan and steam for 2-3 minutes to wilt the spinach. Turn off heat.
- Divide cooked spinach mix in between two large ramekins.
- Crack one egg into each ramekin and pour the three egg whites in as well. Sprinkle the eggs with the salt, pepper and paprika.
- Bake in a 400 degree F oven for 10-12 minutes or until egg whites are just set. It's okay if the yolks are still runny as they will act as a sauce for the dish. Add hot sauce if using and serve hot!
Recipe Notes
You can easily make this dish in one large casserole pan rather than individual ramekins
