Add spinach and remaining broth. Cover pan and steam for 2-3 minutes to wilt the spinach. Turn off heat.
Divide cooked spinach mix in between two large ramekins.
Crack one egg into each ramekin and pour the three egg whites in as well. Sprinkle the eggs with the salt, pepper and paprika.
Bake in a 400 degree F oven for 10-12 minutes or until egg whites are just set. It’s okay if the yolks are still runny as they will act as a sauce for the dish. Add hot sauce if using and serve hot!
