Instructions
- Combine shrimp, taco seasoning and garlic. Toss well.
- Spread seasoned shrimp in a non-stick saute pan and cook over medium heat for 2 minutes, flipping shrimp and cooking for another 2 minutes. Set aside.
- Do a quick saute of the red onion- not to fully cook but to soften and take the edge off them.
- Add lemon juice, salt, cilantro and vegetable broth to a food processor and blend well.
- Place sliced onion in a bowl and pour dressing over the top. Let sit for 30 minutes to marinate.
- Toss shrimp with marinated onion and serve chilled.
