P2 hCG Diet Protein Veggie Recipe | Shrimp and Onion Salad | LSP + SP

Ingredients
  • 7oz shrimppeeled and cleaned
  • 2tbsp Rayzel’s taco Seasoning
  • 1tbsp garlicminced
  • 2 1/2cups red onionsliced thinly
  • 1/4cup cilantro
  • 1/4cup vegetable brothSP: Use water instead
  • 1/4cup lemon juice
  • 1/2tsp salt
Instructions
  1. Combine shrimp, taco seasoning and garlic. Toss well.
  2. Spread seasoned shrimp in a non-stick saute pan and cook over medium heat for 2 minutes, flipping shrimp and cooking for another 2 minutes. Set aside.
  3. Do a quick saute of the red onion- not to fully cook but to soften and take the edge off them.
  4. Add lemon juice, salt, cilantro and vegetable broth to a food processor and blend well.
  5. Place sliced onion in a bowl and pour dressing over the top. Let sit for 30 minutes to marinate.
  6. Toss shrimp with marinated onion and serve chilled.
