Meal components: protein + veggie + 1/2 fruit
Instructions
- In a small bowl, mix greek yogurt, lemon juice, cumin, mustard and salt.
- Add tuna, apple, shallot and celery to the bowl and toss everything until well mixed.
- Serve chilled immediately or store in an airtight container in the fridge for up 3-5 days.
Recipe Notes
- Serve on a piece of lettuce for a garnish or roll in a large lettuce leaf for an easy to eat wrap. - Add a few cranberries, sliced in half, to add some pretty color (may need 1/4 scoop of stevia extract powder to combat the tartness of cranberries).
