P2 hCG Diet Protein Veggie Fruit Recipe | Tuna Waldorf Salad | AP

Ingredients
  • 7oz Water Packed Tuna
  • 1 applechopped finely
  • 1/2cup shallotchopped finely
  • 1cup celerychopped finely
  • 2tbsp fat free greek yogurt
  • 1tbsp lemon juice
  • 1/8tsp cumin
  • 1 1/2tsp dijon mustard
  • 1/4 salt
Instructions
  1. In a small bowl, mix greek yogurt, lemon juice, cumin, mustard and salt.
  2. Add tuna, apple, shallot and celery to the bowl and toss everything until well mixed.
  3. Serve chilled immediately or store in an airtight container in the fridge for up 3-5 days.
Recipe Notes

– Serve on a piece of lettuce for a garnish or roll in a large lettuce leaf for an easy to eat wrap. – Add a few cranberries, sliced in half, to add some pretty color (may need 1/4 scoop of stevia extract powder to combat the tartness of cranberries).
