Ingredients
Fish:
- 7 oz Tilapia
- 1/4 tsp celery salt
- 1/4 tsp ground black pepper
- 2 tsp garlic minced
- 1 tsp dried parsley
- 1/2 tsp dried sage
- 1 tsp lemon zest
- 1/2 cup lemon juice
- 6 lemon slices
Salad:
- 6 cups spinach
- 2 tbsp green onion
- 1 tsp Swerve
- 2 tsp fresh chopped mint
- 2 cups chopped apple
- 1/4 cup lemon juice
- 1/4 tsp salt

Instructions
- In a small bowl, whisk lemon juice, salt, and swerve together. If needed, heat for 30 seconds in a microwave to help the swerve dissolve.
- In a large bowl, toss spinach, green onion, mint and apple together. Pour the dressing over salad and toss. Divide the salad between 2 plates.
- Rub the tilapia with celery salt and black pepper then place on a lined sheet tray. Let it sit for 5 minutes.
- In a small bowl, whisk together garlic, parsley, sage, lemon zest and lemon juice. Pour the mixture over tilapia slices. Place the lemon rounds on top of the fish then bake in a 400 degree oven for 10-12 minutes.
- Place one slice of tilapia on each plate (half the cooked amount) and serve with salad.
Recipe Notes
- AP Option - add cucumbers to salad and make the dressing with coconut oil. - Sage, parsley, pepper and celery salt mix would be great as a dry rub on lots of types of fish.
