P2 hCG Diet Protein Veggie Fruit Recipe | Lemon Fish with Spinach Apple Salad | SP + AP

Ingredients
Fish:
  • 7oz Tilapia
  • 1/4tsp celery salt
  • 1/4tsp ground black pepper
  • 2tsp garlicminced
  • 1tsp dried parsley
  • 1/2tsp dried sage
  • 1tsp lemon zest
  • 1/2cup lemon juice
  • 6 lemon slices
Salad:
  • 6cups spinach
  • 2tbsp green onion
  • 1tsp Swerve
  • 2tsp fresh chopped mint
  • 2cups chopped apple
  • 1/4cup lemon juice
  • 1/4tsp salt
Instructions
  1. In a small bowl, whisk lemon juice, salt, and swerve together. If needed, heat for 30 seconds in a microwave to help the swerve dissolve.
  2. In a large bowl, toss spinach, green onion, mint and apple together. Pour the dressing over salad and toss. Divide the salad between 2 plates.
  3. Rub the tilapia with celery salt and black pepper then place on a lined sheet tray. Let it sit for 5 minutes.
  4. In a small bowl, whisk together garlic, parsley, sage, lemon zest and lemon juice. Pour the mixture over tilapia slices. Place the lemon rounds on top of the fish then bake in a 400 degree oven for 10-12 minutes.
  5. Place one slice of tilapia on each plate (half the cooked amount) and serve with salad.
Recipe Notes

– AP Option – add cucumbers to salad and make the dressing with coconut oil. – Sage, parsley, pepper and celery salt mix would be great as a dry rub on lots of types of fish.
