Ingredients
Meatza Crust:
- 7 oz ground chicken
- 1/4 tsp salt
- 1/4 scoop stevia extract powder
- 1 tsp lemon zest
Topping:
- 2 cups strawberries
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- 1 lemon thinly sliced
- 2 scoops stevia extract powder

Instructions
- In a bowl, mix ground chicken, salt, stevia extract powder and lemon zest for the crust.
- Press the chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove the plastic wrap.
- Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
- While crust is cooking, place half of the strawberries, stevia extract powder, vanilla and lemon juice in a small pot and bring to a simmer. Simmer until the liquid begins to thicken, about 3-5 minutes. Remove from heat and puree. Let it cool.
- Remove crust from oven and spread strawberry sauce over the crust.
- Thinly slice the remaining strawberries and lay across the crust along with the lemon slices. Serve warm.
Recipe Notes
- Use a mandolin sliced to cut the lemons sliced very thin. - Add chopped mint leaves to the top of the pizza. - AP Option: add 4 tbsp yogurt to the strawberry sauce after cooled for a creamier sauce(2 tbsp per serving).
