Ingredients
- 7 oz chicken breast (100g per 3.5 oz) boneless, skinless
- 7 oz Miracle Rice (1 package per 7 oz) drained & rinsed - AP
- 3 tbsp vegetable broth
- 1 cup fennel chopped
- 1/2 cup red onion chopped
- 1 tbsp garlic diced
- 1/2 cup carrots shredded - AP
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp lemon zest
- 1/2 cup apple diced (optional)

Instructions
- Sprinkle chicken with a ¼ tsp salt and let sit out on a counter for 10-15 minutes. Wrap chicken breast in aluminum foil and bake in a 350 degree F oven for 20-30 minutes or until the chicken is fully cooked (or cook in Instant Pot). Chop and set aside.
- Heat the vegetable broth and ¼ tsp salt in a large sauté pan and cook fennel, onion, garlic and carrots until the vegetables begin to soften (about 5 minutes).
- Add spices and stir thoroughly.
- Add cooked chicken and stir together with veggies and miracle rice. Serve (with apple if doing that).
Recipe Notes
You can substitute chicken broth for vegetable broth if needed. Grill the chicken rather than steaming in foil for a nice grilled flavor.

Just made this dish and it is fantastic!!! Doesn’t seem like an HCG meal at all. And now I know what to do with fennel. Never used it before. Thanks for the wonderful recipe!

Oh yay so glad to hear that Laura! I know fennel is like one of those raise your eyebrows and shrug shoulders veggie lol. But it’s nice to vary it up a bit from celery now and then ;)-
