Instructions
- Divide the ground chicken into (4) 50g portions and shape into thin patties.
- Sandwich half of diced tomatoes and 1 tbsp of basil between 2 of the patties and pinch to secure closed. Repeat.
- Season with salt and pepper to taste. Cook over medium-high heat for 5-6 minutes per side. Serve with tomato slices and basil drizzled with balsamic on the side.
