Ingredients
  • 7oz ground chicken breast
  • 1/2cup fresh diced tomato
  • 2tbsp thinly sliced basil
  • 1/2tsp salt
  • Pepper to taste
  • 8slices tomato¼” thick
  • 10-12leaves fresh basil
  • 2tbsp balsamic vinegar
Instructions
  1. Divide the ground chicken into (4) 50g portions and shape into thin patties.
  2. Sandwich half of diced tomatoes and 1 tbsp of basil between 2 of the patties and pinch to secure closed. Repeat.
  3. Season with salt and pepper to taste. Cook over medium-high heat for 5-6 minutes per side. Serve with tomato slices and basil drizzled with balsamic on the side.
