Ingredients
- 7 oz ground chicken (100g per 3.5oz)
- 1/2 tsp salt
- 2 cups tomatoes sliced (about 3 medium tomatoes per 2 cups)
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/2 tsp Italian seasoning
- 1/4 cup Simple Girl Balsamic Vinaigrette
- 1/4 cup basil chopped

Instructions
- Place balsamic vinaigrette in a small saucepan and bring to a boil. Boil for about 5 minutes over low heat or until syrupy and thick. Set aside.
- Place tomato slices on a baking tray lined with parchment or a Silpat. Sprinkle with 1/8 tsp salt, pepper and Italian seasoning. Bake in a 400 degree F oven for 20 minutes or until brown spots begin to appear on tomatoes. Remove from oven and set aside.
- In a large bowl, mix ground chicken and salt.
- Press chicken mix into an eight-inch pizza pan. Cover with plastic wrap and press again or use a rolling pin to make the chicken as flat and even as possible. Remove plastic wrap
- Bake in a 400 degree F oven for 20 minutes, chicken crust will begin to brown.
- Remove the crust from the oven and arrange roasted tomatoes on the top. Return to oven for 5 minutes.
- Remove from the oven again and sprinkle with fresh chopped basil and drizzle the balsamic glaze over the top. Serve hot.

Ohemgee!! Totally worth the few steps and spiced up my boring bland P2 Meals. Will even continue to make Meatza beyond P2. No ‘chicken’ taste if that makes sense? I love the different texture it brought my meal as well. Highly reccomended and can’t wait to have Serve 2 tomorrow.

I thought Basalmic Vinegar was no go for SP phase 2 because most contain sugar?
Hey Jessica- some balsamics wouldn’t be suitable for P2, but there are quite a number that have only 10-15 calories per tablespoon- in these cases, for instance mine has 10 calories and 2 carbs, no added sugars, for 1 tbsp. This seems to be perfectly fine for people on P2 just like the fruit sugar in the fruits eaten on P2. I hope that makes sense! Of course totally up to you what you feel comfortable doing though. 🙂
Hi there, I new to the concept of AP. I did my first round 9 years ago and it was the strict version .
Would you use coconut aminos in place of balsamic ? Is coconut aminos AP?
I think coconut aminos would be ap too. Balsamic vinegar, if you do not use a kind with added sugar, should be strict protocol- vinegar was allowed. Many balsamic vinegars do not have any sugar added. I hope that helps!
Is the crust,meatza, cauliflower? what is the recipe?
Nope, the crust is actually MEAT – isn’t that crazy?? It sounds like totally absurd and it works amazingly! So it can be completely SP strict protocol as long as you use Ground chicken breast, or super lean ground beef, or if you are AP you can of course use other things as well. The recipe is there on the blogpost I believe. 🙂

I don’t like the Simple Girl dressings, so I just made my own, using balsamic vinegar, water, stevia, spices, and a little xanthan gum. Tastes perfect, and actually ended up having less sugar than the store bought dressing.
