SOUTHWEST STEAK
- 7 oz thinly sliced sirloin steak
- 1/2 tbsp chili powder
- 1/2 tsp ground cumin
- 1 tsp apple cider vinegar
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
PEACH TOMATO SALSA
- 1 cup fresh peaches peeled, pitted and chopped
- 1 cup peeled and chopped tomatoes
- 1/3 cup seeded and chopped green bell pepper
- 2 tbsp minced red onion
- 2 tsp minced and seeded jalapeño
- 1 tsp fresh lime juice
- 5 mint leaves chopped

Instructions
- In a medium bowl, combine chili powder, ground cumin, apple cider vinegar, garlic powder, salt and pepper. Add the steak to the medium bowl and mix with your hands to coat well. Place in the refrigerator for at least 15 minutes before cooking.
- In a large bowl, mix together ingredients for the peach salsa. Place in the refrigerator until ready to use.
- Heat a medium skillet over high heat. Once the pan is hot, add the steaks to the pan. Cook for 30 seconds to 1 minute. Flip the steaks and cook for another 30 seconds to 1 minute, until medium rare.
- Remove steak from heat and serve with peach tomato salsa.
Recipe Notes
You can easily make this salsa one to two days ahead of time. The longer the salsa sits, the more flavor it will have!
Prepare the steak ahead of time by making it with the marinade the night before or in the morning before you leave for work.
