Ingredients
SOUTHWEST STEAK
  • 7oz thinly sliced sirloin steak
  • 1/2tbsp chili powder
  • 1/2tsp ground cumin
  • 1tsp apple cider vinegar
  • 1/2tsp garlic powder
  • 1/4tsp salt
  • 1/4tsp black pepper
PEACH TOMATO SALSA
  • 1cup fresh peachespeeled, pitted and chopped
  • 1cup peeled and chopped tomatoes
  • 1/3cup seeded and chopped green bell pepper
  • 2tbsp minced red onion
  • 2tsp minced and seeded jalapeƱo
  • 1tsp fresh lime juice
  • 5 mint leaveschopped
Instructions
  1. In a medium bowl, combine chili powder, ground cumin, apple cider vinegar, garlic powder, salt and pepper. Add the steak to the medium bowl and mix with your hands to coat well. Place in the refrigerator for at least 15 minutes before cooking.
  2. In a large bowl, mix together ingredients for the peach salsa. Place in the refrigerator until ready to use.
  3. Heat a medium skillet over high heat. Once the pan is hot, add the steaks to the pan. Cook for 30 seconds to 1 minute. Flip the steaks and cook for another 30 seconds to 1 minute, until medium rare.
  4. Remove steak from heat and serve with peach tomato salsa.
Recipe Notes

You can easily make this salsa one to two days ahead of time. The longer the salsa sits, the more flavor it will have!

Prepare the steak ahead of time by making it with the marinade the night before or in the morning before you leave for work.
