Instructions
- Combine all ingredients in a medium bowl. Stir to mix well.
- Cover with plastic wrap. Place in the refrigerator for at least 2 hours, up to 12 hours. Or you can also simply grill the shrimp as well.
- Spoon the ceviche into two bowls and garnish with fresh cilantro.
Recipe Notes
The longer you let this salad sit, the more the flavors will develop.
If you don’t have grapefruit juice, you can substitute orange juice and orange segments for the grapefruit.
