hCG Diet Phase 2 Recipe | Shrimp Ceviche Salad – SP

Ingredients
  • 7oz raw shrimpdiced
  • 1/3cup minced red onion
  • 1tbsp minced jalapeno
  • 1cup peeled and chopped cucumber
  • 2tbsp fresh lime juice
  • 1/3cup fresh grapefruit juice
  • 2/3cup diced grapefruit segments
  • 1/4tsp salt
  • 1/4cup freshly chopped cilantro
Instructions
  1. Combine all ingredients in a medium bowl. Stir to mix well.
  2. Cover with plastic wrap. Place in the refrigerator for at least 2 hours, up to 12 hours. Or you can also simply grill the shrimp as well.
  3. Spoon the ceviche into two bowls and garnish with fresh cilantro.
Recipe Notes

The longer you let this salad sit, the more the flavors will develop.

If you don’t have grapefruit juice, you can substitute orange juice and orange segments for the grapefruit.
