meal components: protein + veggie
Instructions
- Separate leaves and stems from Swiss chard leaves and chop both into one-inch pieces.
- In a small bowl, combine garlic, chives, parsley and nutmeg. Set aside.
- Place 1/4 cup of broth in a large sauté pan along with swiss chard stems. Cover and steam for about 8 minutes.
- Add chard leaves to the pan, cover again and let wilt for one minute. Turn off heat.
- Bring remaining broth and onion to a boil in a small saucepan. Turn off heat and stir in cottage cheese.
- Pour cottage cheese mix over cooked chard and toss together. Pour the mix into a 12-inch oval gratin pan or 2 qt baking dish.
- Sprinkle the spice mix over the top of the gratin and bake in a 400 degree F oven for 20 minutes. The mix should be bubbling. Serve hot.

Made this dish and both my husband and myself LOVED it! A nice change of pace having the cottage cheese for protein.
